During the TOS 6 installation, I selected the SSD (970 evo plus 250gb) as the system drive. After installation it seems that the HDDs that were plugged in are also used as system HDDs.
There are used about 25 gb on the SSD. Can I use the remaining 225 gb? For example for applications from AppCenter, for HyperCache or just file storage.
It's strange that most of the drive is inaccessible and not used for the system.
Regardless of where you select to install os, all the drives you install will be partitioned as if for the operating system - even when installed later. The drives you actually select will be marked as 'active' ('system drive'). It would appear that if you only select 1 drive (especially nvme) a second drive will be added by the system to be active. I have never seen anything written about this. My experience (with an earlier version) was similar to yours.
Since it is not a good idea to mix nvme and hdd in a raid array (which is what the os appears to do), I suspect this is something that needs to be addressed. I now ensure that I install my os on a pair od nvme in raid. (I don't need hypercache)

Sorry, can't remember. I think drives were formatted in TOS 5.1 without factory reset, then I ran OS installation with only nvme and at the drive selection stage I plugged in HDDs.
To remove the system from your drive, you can "wipe the drive" and restart your TNAS.
