Messed up in setting up Plex Libraries, best way to fix?

When I Initially set up my Plex Library, I created only a Movie library, and put a folder within it called TV. I typically watch using closed captions. Plex does a good job in finding the captions for the movies, but (and I can understand why) it won't find them for TV shows because it thinks the shows are movies and not episodes of a television show.

I created a TV Library, and my newly added shows DO show up as TV in that library, consequently, I have good luck in finding closed captions. BUT, when I try copying the TV shows out of the movie directory, delete the original copies, and paste the shows into the TV library, the folder shows up, but no episodes. I've rescanned the libraries multiple times, and signed out and back in more times than I can count.

Am I better off just deleting all my libraries and redo it from scratch, having all the movies in the movies library, and putting all the tv shows in the TV Library? Or, by deleting the libraries, then re-creating them, will Plex somehow know that the TV show files were originally considered Movie Files?

Please throw a bone to a frustrated newbie.

Plex identifies content based on the files' metadata and folder structure. If you place TV show files in your Movies library, Plex may mistakenly identify them as movies. You can move TV shows from your Movies library to your TV library and then rescan your TV library. Alternatively, you can delete and recreate your TV library to ensure Plex recognizes the files correctly.

I tried moving the files to a different location and adding that location to the TV library, and they didn't show up. I even did a rescan of both directories. Do I need to scan the Metadata on the TV library?
