TOS 5.1.31 F5-221 with 3 x 4TB Ironwolf TRAID.
Added external USB Ironwolf 4TB.
Formatted EXT4 on TNAS
Shows as EXT4/mounted
However I cannot see the device in USB Copy (or any other apps), nor in file manager.
Logged in as admin user, so this should be automatic?
Cannot access permissions setting in USB device - just continuous 'working' circle. Have to close GUI to continue.
The device is functional. I was able to create a storage pool and volume (as an experiment) - subsequently deleted and reformatted.
Mounting is also an issue. Once mounted device can be safe ejected, but I have to physically disconnect/power off
and then reconnect to mount. Does not auto-mount on restart - which is a bit of an issue as it is in a remote location.
Any advice/clues
[Please don't tell me to re-install. The whole purpose of the ext USB is to make a backup before I nuke the drives
and start again.]

Can't simply judge your problem, we need more information.
Please update to TOS 5.1.34, if the problem is not resolved, please take some related screenshots and generate and download a log report at TOS > Technical Support > Issues Report, then send to our support team mailbox for analysis.
(If it mistook the files in the log bundle for a virus when using Gmail, you can try another mailbox.)

When you downloaded the 5.1.34 update package, did you read the warning message at the beginning of the release note? Did you have enough space on your system partition?

Yes and Yes, I did. 400Mb approx.
(But time has moved on and 5.1.34 is now installed uniquely - check my other posts. I have not had time to review USB Copy. Used EaseUS Todo Backup to backup NAS to USB attached to PC. Slow but effective.)

Back to the storage/usb issue.
Now at 5.1.34
USB still not showing USBshare in GUI (or anywhere else I can see).

If I format the USB drive as NTFS (or even as 2 partitions as NTFS) I can see usbshare1 and usbshare2 in windows 10 File Manager as network shares - although I have not tried working with them at present.
However, I still cannot see these as 'destination' choices when trying to set up USB Copy. Destination page is just blank "No Valid Data".
