SECOND UPDATE: I backed up my data once again and recreated the storage pool so that it showed Storage Pool #1 with a new volume called Volume #1. Problem solved. Plex now starts and I'm able to log in to it. Hopefully this experience helps others with the same problem.

UPDATE: I went to the Applications window and clicked the Manage button. The window that appeared shows that Plex is installed on Volume #1. However, my storage volume is called Volume #2. I tried to change that but had trouble when deleting my old volume (it kept re-appearing) so my new volume was ...
