F2-210 RAM usage issue (maybe after upgrade?)

Hi,
I have a F2-210 since 1 year with 2 x 2 TB drives and it has always worked pretty well. I use the NAS for two things: store data and use the Plex server app.
I upgraded TOS to 4.1.30 couple of weeks ago and yesterday to 4.1.31, I also installed patch 3 (version is now 4.1.31-2008031214-P1.03)
Since several days the RAM usage has increased (it's never below 70%) to the point that, even without doing anything, so not even using PLEX or copying files, it gets to 100% and crashes, either auto-restarting or completely freezing, with the only left to unplug and re-plug the NAS (with the risk of damaging the hard drives).
I'm to the point where it's impossible to use the NAS for more than 10-15 minutes without crashing and I'm not sure what else to do.
Should I downgrade the TOS? What else?
If I need to share more info let me know.
