D5 Thunderbolt 3 mixed disks

Hi,
I have just purchased a D5/T3 and need to decide which disks to use.
At present I have available 5 x WD Gold 12TB, 2 x WD Red 10TB and 1 x Seagate Barracuda 8TB.
In the next few months I will gradually replace the disks with 5 x Seagate Ironwolf Pro 16TB in RAID 5 configuration.
My question is:
1. can I start with the 5 WD gold 12 TB disks? They are marked as not supported: does it mean that they will not work or just that they are not recommended?
2. If I use different disks, such as the 2 WD Red 10TB and the Seagate Barracuda 8TB at the same time, would I be able to setup a RAID 0 accross the three disks or just accross the two WD Red?
