All traffic being routed through the OpenVPN?

I am at my wits end with this, on TOS 6 I added a OpenVPN adapter that does not show up in qbittorrent > advanced > network interface (tun0 is missing) I confirmed with ssh (dev/net/tun) that it is there, so I was able to add it in the qbittorrent.conf file with "Session\InterfaceName=tun0" and I verified with ipleak.net that it was routing through it, but then I discovered that my DynDNS was also updating the WAN IP to the OpenVPN IP? It needs to update to my actual ISP IP, not the VPN one.

this also resulted in not being able to pull images through portainer until I disabled the OpenVPN adapter

I unchecked "use the remote network's default gateway"
So what am I doing wrong? How can I stop all traffic routing through the VPN unless I explicitly choose to use it?
Why isn't the tun0 interface showing up in qbittorrent? (I already saw in another post that it only appears when enabled), but it also doesn't show when it is, or isn't, or when I restart the qbittorrent container in either OpenVPN adapter states.
Last resort is starting over with qbittorrent and trying to add a qbittorrent + gluetun docker, but all the documentations I can find only applies to Synology, so I am not even sure if that will work given there is so little peer documentation for it with TOS.
Right now I am using a socks5 proxy, but I want to get the VPN sorted.
