Is it possible to create a new super user, if so, how? Thanks

The system has only one super administrator.
If you want to re-create the super administrator, go to Control Panel - System - Configuration - Reset System Configuration to return to the Create Administrator Account page.

No. Resetting the system configuration will erase all system configurations, but hard drive data will not be affected.
