I have a FS-221 with (2) 12TB Drives set up in RAID 1
I also have the data stored on the NAS remotely backed up on external hard drives.

Is there a simple way to undo the RAID 1 and essentials have 24TB of unraided storage? Or do I need to delete the contents of the 2 NAS drives and reapply the data from the external hard drives?

Yes, you need to delete the volume and storage pool.
Note: This will delete all data on your hard drive, please make sure the backup you made before is complete.
