Is there really an advantage to having the system OS on the nvme over the regular HDD's?
I've been debating if I want to switch my system drive or not.

NVMe is superior to HDD in terms of speed, stability and experience. If the budget allows and there is a demand for performance, it is worth switching the system disk.

Just one thing to be aware of. My experience is that with the system drives on nvme you will get faster response if your apps are also on nvme but your data is separate. Thing is the default Volume 1 with user 'homes' is on the nvme drive. Normally apps will also install on Volume1 (so that is good) but you need to ensure that is the option chosen when installing apps (if offered).
The downside is that when the system hibernates, it actually waits for the HDD to wake up before the desktop display wakes up. I can hear the hdd (mine are noisy) 'chattering' well before the display wakes up.
