An incredible and unheard of situation.
Did you say that even if TNAS is running normally, the hard drive light will still be red?
Perhaps some unknown reasons have caused the problem. You can provide a system report to the customer service or technical support email on the official website homepage for inspection.
Not sure what they would be looking for as I can't see a lot of info in the system logs ?
Had another go at least trying to get rid of the all red HDD lights, so updated again but went 5.1.67 to 5.1.79 and then to 5.1.95 and on both I could not get the media server to work, every time I clicked apply the ticked box became unticked! So gave up once again and did a complete reset using the 5.0.176 by mistake but suddenly all the green HDD lights were back, but as soon as I updated to the 5.1.67 again all are again red!!

from 5.1.67-00214 to 5.1.95-00372.
The process was very fast (less than a minute).
I could reconnect immediately after the reboot.
The two IPs didn't change.
From a first look:
shares works
scheduled TFM backup worked
Jellyfin is working
Plex is working
Virtualbox with Manjaro Linux guest is working
QBittorrent works
Web server works
All the services were running when I manually updated: I didn't stop anything.
No issues right now.

I think I may have the answer to this, strangely I thought I had previously updated the unit so it had the required 8 gig partition however when I looked it was only 2 gig, but it was running the 5.1.67 and then 5.1.79 updates and working fine, I then tried to update to the 5.1.95 update, and it was then that the lights turned red so maybe down to the incorrect partition size.
