While reluctant to use the unofficial update provided by Outkastm, I did it anyway due to lack of support from Plex Support.
The update provided by Outkastm did work but it does have a few cosmetic issues. My Plex Server is now reporting the current version but the version, release date, and size is still the same when viewed via the web console.

We haven't updated, so it's normal that you see the same version, release date, and size.

I appears that users of TOS 5.0 is still reliant upon Outkastm for Plex Server updates.

The package downloaded from the Plex website cannot be installed in TOS 5 >App center.

Today is the first time that I've seen this problem given any attention on the Plex Forum.
